The team at HEH is led by Chef Oat, Nattaphon Othanawathakij, a chef turned Thai national snowboarder, turned chef. Fascinated by endless opportunities of the vast Andaman Sea, he and his business partners established HEH in 2019. In 2021, he took his team to gain victory as a Winning Challenger Chef at The Iron Chef Thailand. Oat lived in Australia for 10 years, working in both casual and fine dining restaurants, and catered for the Australian Open, Formula 1 Australian Grand Prix, and the Melbourne Cup Carnival.
